Reinvent Epiphany with this high-protein, no refined sugar galette des rois. A lighter, more nutritious twist on the traditional French dessert—perfect for enjoying a comforting treat while nourishing your body.

Ingredients

For the filling:

  • 120 g unsweetened applesauce
  • 60 g vanilla plant-based protein powder
  • 2 eggs
  • 1 tsp vanilla extract
  • 100 g almond flour

For the pastry:

  • 2 sheets of vegan puff pastry
  • 1 egg yolk
  • 1 tbsp plant-based milk (oat milk)

Recipe

  1. In a bowl, mix the applesauce, almond flour, protein powder, eggs, and vanilla extract until smooth and creamy.
  2. Roll out one puff pastry sheet onto a baking tray lined with parchment paper. Spread the filling in the center, leaving about 2 cm around the edges. Add a fève (small charm) if desired.
  3. Cover with the second pastry sheet. Seal the edges by pressing with your fingers or a fork. Draw decorative patterns on top using a knife.
  4. Mix the egg yolk with the plant-based milk and brush it over the galette.
  5. Bake in a preheated oven at 180°C (350°F) for 30 minutes, until golden brown.
